Melbourne-based chef & restaurateur Shane Delia Shane Delia is rarely standing still. Given he’s running two popular restaurants - his flagship Maha in Melbourne’s CBD and his street-style 'KBab' (as Delia calls them) offering Biggie Smalls - being able to get around efficiently is a top priority.
He took us for a spin in his customised, refrigerated Vito van and chatted about his hectic schedule. Cruising up Smith Street in Collingwood, where Biggie Smalls is located, Delia admits that life is so busy he only cooks for his family about once a week. ‘Generally it’s brunch on Sunday. It’s probably the best day of the week,’ he grins.
When he’s not driving to see suppliers or complete media commitments, Delia is prioritising his son, daughter and wife, Maha, the woman he credits with igniting his passion when the pair travelled around the Middle East. ‘It made me click and think this was the food I wanted to cook,’ he says, which is why his award-winning establishment is also named Maha. ‘She became the matriarch of the restaurant,’ Delia explains.
